  Italian Country Frittata

Ingredients:
4 T vegetable oil
1 medium-sized zucchini, diced
1 celery stalk, diced (I omit)
2 medium-sized tomatoes, seeded & chopped
salt & pepper
4 eggs
2 T grated Parmesan
1 tsp fresh basil
extra Parmesan for sprinkling
mint sprigs
Instructions:
Heat 2 T oil in a large skillet over low heat. Add zucchini & celery & cook gently 5 minutes. Add tomatoes, salt & pepper & simmer, stirring occasionally, for 15 minutes.

In a small bowl, beat eggs with cheese & basil. Add remaining oil to pan & heat 1 minute. Pour in egg mixture & cook 4 minutes. Carefully, flip mixture & continue cooking second side 4 minutes. Cut into quarters & sprinkle with Parmesan. Garnish with mint springs if desired.

Serves 4.
